Every now and then, when I work on a recipe, the end result takes a completely different turn from what I had originally intended. In this case, I tried to make an avocado salmon rice bowl: a bed of cauli rice, topped with roasted salmon and finished with a tangy avocado salsa. 

Sounds good, right? Well – I started cooking the cauliflower and salmon only to discover that ALL THREE of my avocados were… less than ideal. And I only needed one! 

So I decided to “pivot” the recipe (see how trendy I am?!?) and make the dish into a union of sweet, spicy, and salty flavors. In fact I shared the second portion with a neighbor – who, when I checked whether she had found it too spicy, said: “Not at all! A little kick but not a flaming tongue after eating it!”

The avocado salsa would have been awesome, and feel free to add it if you happen to have an avocado that hasn't gone beyond ripe – all it would need would be a little lime juice, fresh cilantro, salt and pepper. 

How to Make Low Carb Glazed Salmon with Cauli Rice

For convenience I used a microwave-steam-in-the-bag plain cauliflower rice, which took less than five minutes to cook. But if you're making your own, please see my tutorial on how to make cauliflower rice. 

How to Make Cauliflower Rice

Because the salmon would take longer than the cauliflower, I started cooking it first – but you may prefer to cook things in a different order. 

Place two large salmon fillets (skin on for preference so that they hold together, but not essential) on a small baking sheet lined with a silicone mat or parchment paper. If you line it with kitchen foil you'll need some non stick spray as well. 

In a small bowl, mix together soy sauce, lime juice (no need for fresh – out of a bottle is fine!), and sugar free honey. Yes – it exists  – check out my full review of low carb honey options!

Spread the mixture over the salmon fillets, then season with salt and pepper. Roast in a preheated oven for 10-15 minutes (depending on thickness and how well done you like your fish). 

Meanwhile, cook the cauliflower rice according to the pack instructions, unless making from scratch. When it is cooked, drain (if necessary) and place in a bowl. Add chopped fresh cilantro, red pepper flakes, salt, and pepper.

Stir well then transfer to a serving platter. When the salmon is cooked, remove it from the oven. You may see that some of the glaze has burnt but it won't affect the salmon.

Place the salmon over the cauli rice and garnish with cilantro.

Ingredients

  • 2 salmon fillets, skin on (approx 1lb total)
  • 1 tbs soy sauce (or tamari)
  • 1 tbs lime juice
  • 1 tbs sugar free honey
  • 12 oz cauliflower rice (microwave cook in bag is ideal)
  • 2 tbs chopped fresh cilantro
  • 2 tsp red pepper flakes
  • salt and black pepper

Instructions

  1. Preheat the oven to 400F (200C).
  2. Place the salmon on a small baking sheet lined with a silicone mat or parchment paper. If you line it with kitchen foil you'll need some non stick spray as well. 
  3. In a small bowl, mix together the soy sauce, lime juice, and low carb honey. Spread the mixture over the salmon fillets, then season with salt and pepper.
