I always enjoy roasting a whole chicken, but when I was in Walmart the other day I noticed a twin pack of Tyson® All Natural Premium Cornish Hens, and I knew that they would be perfect for me and my husband.

These Tyson® All Natural Premium Cornish Hens are individually bagged – which really protects them from freezer burn! They are minimally processed with no artificial ingredients, added hormones or steroids. Well that's a relief! If the weather is mild enough where you live you can crank up the grill and cook them outside – we have cooked a whole chicken that way but these would be even easier! You could even fit them in the slow cooker!!

How to Make Cornish Hens with Low Carb Cranberry Sauce

As it was raining on the day I came to cook them and I only have a teeny slow cooker, I decided to roast them. No special prep needed – I just followed the instructions and roasted them in a preheated 350F oven on a rack with some salt and pepper.

The instructions also suggested basting with butter so I chopped up some fresh parsley, mashed it into three tablespoons of softened butter and added some salt and black pepper. Then I dolloped a spoonful over the top of the hens and roasted for one hour, basting with the butter every 20 minutes.

While the hens were cooking I made some low carb cranberry sauce.

I microwaved the green beans according to the pack instructions, and served the Tyson® All Natural Premium Cornish Hens whole, with the beans and the cranberry sauce! It was a perfect meal!Cornish Hens with Low Carb Cranberry Sauce - perfect for the holidays!

Instructions

  1. Preheat the oven  to 350F.
  2. Mash the softened butter with the parsley,  salt and pepper.
  3. Place the hens on a rack and spread the herb butter over the top.
  4. Roast then hens for 1 hour (or until cooked through), basting with the butter every 20 minutes.

Notes

A zero carb recipe, not including the beans or cranberry sauce.

I made this to day, I used bacon sautéed mushrooms as side dish. And made the cranberry sauce, but I added cinnamon to the sauce it helped curb the bitterness or aftertaste of the swerve sugar substitute, it was then actually quite good.

what is a serving size of cranberry sauce? Tbs? 1/4 cup? 1/2 cup? I love cranberry sauce.. I could eat a whole bowl of it... but I'd want to know if my carb count was just 3 or 24... lol

In all honesty I'd need to make it again because this recipe is a few years old and though I've made it since (at least once a year LOL) I haven't measured the volume to be able to calculate the exact serving size. When I next make it - I'll add more details here!

Since there are just 2 of us for the holidays I have made Cornish hens several times...We both love them...I have also made them with the traditional herb stuffing, potatoes and gravy, Because they don't take very long to bake we even have them at other times during the year. The only down side is that you don't have all the left-overs after dinner, but maybe that's a good thing...you don't end up eating a turkey for a week! enJOY!!!
