This jicama slaw is the perfect refreshing low carb side dish for the summer!

I’m a really big fan of jicama, have you tried it? It has the texture of a crisp apple, but with a different flavor that’s mild and refreshing. I’ve used it in this Spicy Watermelon and Jicama Salsa, in this Jicama Salad, and on skewers with Melon and Cucumber! With this recipe, I’ve made it into a tasty slaw! Give it a try!
Peel the jicama and cut it into matchsticks. This will take some time unless you have a clever kitchen gadget, or (like me) you buy them ready prepared in sticks, then cut them into smaller pieces.
Add them to a bowl and add chopped roasted red peppers (out of a jar is fine), chopped green onions, oil, lime juice, black pepper, and salt. I also added a chopped fresh jalapeño because I enjoy the taste and heat! Mix everything together well, then keep in the fridge until required.
Note: My roasted red peppers were super soft and kind of disintegrated, which is why everything is covered in flecks of red! This may not happen to you, so your slaw might look different.
Enjoy this slaw as a side dish to grilled meat or fish!
