These low carb spinach and cheese squares are the perfect party buffet food as they are suitable for low carbers and vegetarians!
I have made these tasty squares for several parties now. Other than crudities, vegetables are often in short supply at buffet tables so this dish can make a welcome change. At other times, I make up a batch and have them on hand as an addition to my lunch or as a quick snack.
Cook a bag of frozen spinach according to the instructions and drain thoroughly.
In a stand mixer, blend eggs then add ricotta, baking powder, and paprika. Mix until smooth. Add some shredded cheese, the cooked and drained spinach, and then season with salt and black pepper. Stir until everything is mixed together.
Pour the mixture into a greased baking dish and bake in a preheated oven for 35 minutes or until the center has set.
After it has cooled slightly, cut it into squares and enjoy some spinachy-cheesy goodness! You could eat these slightly warm out of the oven, but they do tend to feel a little greasy from all the cheese. Luckily they taste great cold, too! Also you might like to consider what size to make them – I suggest cutting them into 9 squares (because that’s really easy with a square baking dish!).
