    One of the hardest things about trying to stay on a food plan is what to do about snacks. Low carb snacks have always been a challenge for me. So, when this book was available, I was thrilled. There are so many awesome choices. I think my favorites are Rainbow Veggie Wraps that could even be a lunch and the Crab Rangoon Dip.

    I am a bonafide snack-a-holic! I've found that with following a low carb diet it's hard to come up with fresh, new ideas for snacking that make it easy for me to stay on track. This book is my perfect solution! I love how the book is divided into savory and sweet categories so no matter my mood I can find a tasty snack to satisfy myself. Also, I love how many of the recipes have multiple servings (like the corn dog muffins and cauliflower cheese muffins) so I can make them ahead and have them ready for a few days. I'm delighted with the book!

    Snacking is my downfall! But I have tried loads of these recipes, and even had them on hand when friends visit - they don't even realise these are low-carb! My absolute favourite is the Crispy Cheese Balls. SO easy and quick to make, I always make double the recipe, they are so popular. The egg wraps were wonderful. A little messy but in a good way :-) The Mint Chocolate Cheesecake Brownies are to die for and also freeze well if I don't want to eat them all on the same day; and the Mozzarella Stuffed Mini Peppers are now ready for grilling for my friends tonight as a starter!
