How to Make Low Carb Pecan Cookies

First you'll need to grind up some pecans – use a food processor or the blade attachment on a stick blender. The pecans are reduced to dust in just a few seconds! The finer the nuts, the better the cookies will be.

In a bowl, add an egg and beat to mix. Pour in the ground pecans and add some low carb sweetener. I use Lakanto – get 20% off if you use coupon code SAFTC! – but something like granular Swerve would be a good alternative. Mix well – it forms a loose “dough” very quickly.

Divide it into 12 sections and use a teaspoon to place them on a baking sheet lined with a silicone mat or parchment paper.

Bake in a preheated oven for 8-10 minutes until firm. Let cool then transfer to a cooling rack. These cookies are best eaten within one day. However, if you have them around for longer they'll still taste good, just a little softer!

  1. Preheat the oven to 350F.
  2. Grind the pecans as finely as possible using a food processor.
  3. Break the egg into a bowl and whisk until lightly beaten. Add the pecans and sweetener, then mix well.
  4. Divide the mixture into 12, then place each portion onto a baking tray lined with a silicone mat.
  5. Bake for 8-10 minutes until firm. Leave to cool slightly then transfer to a cooling rack.
  6. When completely cool, store in an airtight container.

Notes

1.3g net carbs per serving of two cookies (recipe makes 12 cookies).

I used a cup of pecan meal, extra lacanto sweetener, dash of cinnamon. They are so dry, didn’t flattened out ????

If you use a cup of pecan meal, rather than a cup of chopped pecans as the recipe states, you'll be using a lot more pecans by weight. And if you then increase sweetener, it's no surprise that they came out dry. Maybe next time try 3/4 cup pecan meal.

Thank You for the recipe I just made 3 batches. They are amazing just out of the oven. I have seen posts where some did not flatten out. Mine did not as well. Please tell me the pecan measurement is that before of after grinding the nuts to a meal ? I measured mine after grinding them and wonder if that is the difference. I used a sweetener blend, added cinnamon and plan to dip the bottoms in sf chocolate.

I'm so glad you liked them! The pecans are measured when chopped (as that's how I buy them for this recipe), but then they are ground after measuring. I hope that helps!

I only have swerve confectioners on hand. I am assuming you used a granulated product? Would conf. work? Knew i shoulda went to the grocery store! Lol

Yes, I use a granulated sweetener. I imagine the final result with confectioner's would taste OK - no idea about the texture I'm afraid!
