Grilled Zucchini Boats with Beef

These grilled zucchini boats are stuffed with ground beef, low carb salsa, and cheese! An easy recipe that requires just five ingredients.

All you need is just five ingredients to impress your guests next time you're grilling! These stuffed zucchini are SO easy to make, and can be served as either a lunch for four people or an appetizer for eight. Or you could even cut the zucchini in half so that you get 16 “boats” – great for a crowd!

How to Make Grilled Zucchini Boats with Beef

While the grill is heating up, make the filling for the zucchini. Add some olive oil and lean ground beef to a large sauté pan – you might not even need the oil if you use a non-stick pan. I think beef is one of my favorite meats – it can be used for so many dishes and it always tastes so good!

After the meat has browned, drain any excess liquid, then add a cup of low carb salsa (I love the Green Mountain Gringo brand).

Salsa is a super quick way of adding flavoring to any dish – like in my recipe for Quick Cook Bacon Jam which is fantastic! Let the sauce reduce down until hardly any liquid is left – about 10 minutes. Taste for seasoning and add salt and pepper if needed – but I usually find that the salsa adds enough flavor.

Note – the filling can be prepared in advance and then reheated when required.

Meanwhile, prepare the zucchini by cutting them in half lengthways and scooping out the seeds with a spoon.

Place them cut-side-down on the hot grill, and cook for ten minutes.

Flip them over and load them up with beef/salsa mixture – I prefer to do this OFF the grill to reduce spills!

Finally, sprinkle some cheese (I use a Mexican blend) over the top. Return them to the grill (place them between the bars so that they don't roll) for around ten minutes (with the lid closed) or until the cheese has melted.

Garnish with some chopped fresh chives or green onion tops.

  1. Preheat the grill.

  3. Meanwhile, prepare the zucchini by cutting them in half lengthways and scooping out the seeds with a spoon.
  4. Place them cut-side-down on the hot grill, and cook for ten minutes. Flip them over and load them up with beef/salsa mixture.
  5. Finally, sprinkle the cheese over the top. Return them to the grill (place them between the bars so that they don't roll) for around ten minutes with the lid closed or until the cheese has melted.
  6. Garnish with chives, if using.
