I have made these tasty squares for several parties now. Other than crudities, vegetables are often in short supply at buffet tables so this dish can make a welcome change. There's not often any leftovers, but on the rare occasion that one or two are left, they make a great addition to my lunch the next day or as a quick snack.

How to Make Low Carb Spinach and Cheese Squares

Cook a bag of frozen spinach according to the instructions and drain thoroughly.

Mix until smooth. Add some shredded cheese, the cooked and drained spinach, and then season with salt and black pepper. Stir until everything is mixed together.

Spoon the mixture into a greased baking dish and spread the mixture into the corners.

Bake in a preheated oven for 35 minutes or until the center has set.

After it has cooled slightly, cut it into squares and enjoy some spinachy-cheesy goodness! You could eat these slightly warm out of the oven, but they do tend to feel a little greasy from all the cheese. Luckily they taste great cold, too! Also you might like to consider what size to make them – I suggest cutting them into 9 squares (because that's really easy with a square baking dish!). If they look too big, cut each square into four. These make smaller bites which would be perfect for a finger food buffet.

Ingredients

  • 16 oz bag of frozen spinach, cooked and drained according to bag instructions
  • non-stick cooking spray
  • 3 eggs
  • 1 tsp baking powder
  • ½ cup ricotta
  • ½ tsp paprika
  • 8 oz grated cheese
  • salt and black pepper

Instructions

  1. Preheat the oven to 350F.
  2. Spray a 8x8" baking dish with non stick cooking spray.
  3. In a stand mixer, beat the eggs then add ricotta, baking powder and paprika. Beat again until smooth.
  4. Stir in the cheese, the cooked and drained spinach, and season with salt and black pepper.
  5. Spoon the mixture into the baking dish and bake for 35 minutes. Let cool and cut into 9 squares.
