Ingredients

  • ¼ cup almond flour
  • 1 tbs flaxseed meal
  • 1 egg
  • 2 tbs low carb simple syrup
  • 1 tbs coconut oil softened
  • ½ tsp baking powder
  • zest of ½ lemon
  • 2 tsp lemon juice
  • ¼ tsp lemon extract optional

Instructions

  • In a medium sized cup or mug, whisk all the ingredients together with a fork.
  • Microwave the cake batter in the mug for 1 - 1½ minutes, or until the center is cooked.
