Low Carb Creamed Spinach with Celeriac

  • 1 tbs olive oil
  • 1 medium celeriac/celery root approx 7-8oz, peeled and chopped into cubes
  • 1 tsp garlic paste
  • 4 slices cooked bacon chopped
  • ¾ heavy cream
  • 12 oz baby spinach
  • salt and pepper


  • Heat the olive oil in a large saucepan and add the celeriac, together with some garlic paste and chopped cooked bacon.
  • Continue to cook until the celeriac is starting to soften. Add in heavy cream and a LOT of baby spinach. When all the spinach is in the pan, continue to cook until the cream has reduced by about half.
  • Taste for seasoning and add salt and pepper as necessary.
