Low Carb Creamed Spinach with Celeriac

- 1 tbs olive oil
- 1 medium celeriac/celery root approx 7-8oz, peeled and chopped into cubes
- 1 tsp garlic paste
- 4 slices cooked bacon chopped
- ¾ heavy cream
- 12 oz baby spinach
- salt and pepper
Heat the olive oil in a large saucepan and add the celeriac, together with some garlic paste and chopped cooked bacon.
Continue to cook until the celeriac is starting to soften. Add in heavy cream and a LOT of baby spinach. When all the spinach is in the pan, continue to cook until the cream has reduced by about half.
Taste for seasoning and add salt and pepper as necessary.
