Lemon Tarragon Chicken

- 2 tbs unsalted butter
- 1 tsp olive oil
- 2 boneless skinless chicken breasts chopped or sliced
- 2 tbs fresh tarragon chopped
- ½ cup heavy cream
- 1 tbs lemon juice
- salt and black pepper
Melt the butter and oil in a large pan over a medium-high heat.
Add the chicken and tarragon, saute until the chicken is cooked through.
Add the cream, let the sauce bubble up, then reduce heat and simmer for 5 minutes.
Add lemon juice and salt and pepper to taste.
