Butter Poached Salmon with Cucumber Noodles

- ¼ cup unsalted butter
- 1 tbs olive oil
- 2 salmon fillets skin on
- 1 English cucumber
- ½ cup cherry tomatoes halved
- 2 tsp lemon juice
- 1 tsp olive oil
- 4-6 leaves of fresh basil finely chopped
- black pepper
Melt the butter in a pan and add the olive oil. Add the salmon and cook for 10-15 minutes until cooked through. Baste regularly with the butter.
While the salmon is cooking, make the cucumber noodles with a julienne peeler or spiralizer.
Place the "coodles" in a bowl, and add the olive oil, lemon juice, tomatoes, chopped fresh basil and black pepper. Mix well.
Serve the salmon over a bed of cucumber noodles, sprinkled with extra black pepper.
