Butter Poached Salmon with Cucumber Noodles

Ingredients

  • ¼ cup unsalted butter
  • 1 tbs olive oil
  • 2 salmon fillets skin on
  • 1 English cucumber
  • ½ cup cherry tomatoes halved
  • 2 tsp lemon juice
  • 1 tsp olive oil
  • 4-6 leaves of fresh basil finely chopped
  • black pepper

Instructions

  • Melt the butter in a pan and add the olive oil. Add the salmon and cook for 10-15 minutes until cooked through. Baste regularly with the butter.
  • While the salmon is cooking, make the cucumber noodles with a julienne peeler or spiralizer.
  • Place the "coodles" in a bowl, and add the olive oil, lemon juice, tomatoes, chopped fresh basil and black pepper. Mix well.
  • Serve the salmon over a bed of cucumber noodles, sprinkled with extra black pepper.
