Low Carb Waffles with Whipped Butter

for the waffle batter

  • 2 cups low carb baking mix
  • 1 tsp low carb sweetener Swerve or similar
  • ¼ tsp salt
  • cups unsweetened almond milk
  • 2 eggs
  • 2 tbs vegetable oil

for the whipped butter

  • ½ stick unsalted butter
  • 2 tbs heavy cream
  • ½ tsp low carb sweetener Swerve or similar


  • Mix together the baking mix, salt and sweetener in a large bowl.
  • Whisk together the eggs, oil and milk in a separate bowl.
  • Combine the wet ingredients with the dry, and stir well to mix.
  • Add a cup full of the mixture to a preheated waffle maker, and cook for around 4 minutes. Repeat to make two more waffles.
  • To make the whipped butter, add the butter, cream and sweetener to a stand mixer and whisk until light and fluffy.
  • Serve the waffles topped with the butter.
