  • 1 cup low carb baking mix
  • tsp baking powder
  • ¼ cup low carb sweetener
  • 2 eggs
  • ½ cup water
  • ½ cup fresh blueberries


  1. Preheat the oven to 350F. Spray a 6-hole muffin tin with non-stick spray or use silicone liners.
  2. In a large bowl, mix together the baking mix, baking powder and sweetener.
  3. Add the eggs and water, and stir briefly to combine. Add the blueberries, stir again.
  4. Divide the mixture between the muffin cups and bake for 20 minutes or until cooked.
  5. Let cool slightly then transfer to a cooling rack.
