  • 1 tbs olive oil
  • 10 oz shredded red cabbage
  • ½ cup fresh cranberries
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tbs white wine vinegar
  • salt and black pepper
  • ¼ cup crumbled goat's cheese
  • flat-leaf parsley for garnish


  • Heat the oil in a large skillet and add the red cabbage, cranberries, onion powder, thyme, and vinegar.
  • Continue cooking until the cabbage is cooked and the cranberries have popped.
  • Taste for seasoning, and add salt and pepper as necessary.
  • Transfer to a serving dish and sprinkle with the goat's cheese and parsley.
