  • ½ stick (2 oz) unsalted butter softened
  • 1 cup almond flour
  • 2 tbs low carb sweetener
  • 1 egg
  • ¾ cup chopped pecans


  • Preheat the oven to 300F.
  • Add the butter, almond flour, sweetener and egg to a stand mixer bowl, and beat until fully combined.
  • Stir in the pecans.
  • Form the mixture into small balls (this recipe makes about 16), and place them on a baking sheet lined with a silicone mat or parchment paper.
  • Bake for 18-20 minutes or until cooked through and browning on top. Let cool for 5 minutes then transfer to a cooling rack.
