Low Carb Eggplant Fritters

- ½ cup almond flour
- ¼ cup flaxseed meal
- 1 tsp onion powder
- salt and pepper
- 1 medium eggplant cut into 8 slices
- 1 egg lightly beaten
In a bowl, mix together almond flour, flaxseed meal, onion powder, salt and pepper, then set aside.
Dip each slice of eggplant fully into the egg, then into the almond mixture.
Fry the slices in a large skillet (you will probably have to make them in a couple of batches). They will need about 3-5 minutes on each side, depending on thickness.
