Ingredients

  • ½ cup almond flour
  • ¼ cup flaxseed meal
  • 1 tsp onion powder
  • salt and pepper
  • 1 medium eggplant cut into 8 slices
  • 1 egg lightly beaten

Instructions

  • In a bowl, mix together almond flour, flaxseed meal, onion powder, salt and pepper, then set aside.
  • Dip each slice of eggplant fully into the egg, then into the almond mixture.
  • Fry the slices in a large skillet (you will probably have to make them in a couple of batches). They will need about 3-5 minutes on each side, depending on thickness.
