Ingredients

  • 4 oz cream cheese softened
  • 2 cups shredded cheese cheddar or Italian blend
  • ½ cup mayonnaise
  • 2 tsp onion powder
  • 1 tsp chipotle powder or to taste
  • black pepper
  • ½ cup unsweetened almond milk
  • non-stick spray
  • 1 medium cauliflower cut into florets
  • chipotle flakes to garnish

Instructions

  • Combine the cream cheese, shredded cheese, mayo, onion powder, chipotle powder and black pepper together in a bowl.
  • Spray a slow cooker with non-stick spray, then add the cauliflower florets.
  • Add the cheese mixture to the slow cooker, along with the almond milk. Stir to combine.
  • Cook on low heat for 3 hours or until cauliflower is cooked to desired tenderness.
  • Serve garnished with chipotle flakes, if using.
