Low Carb Berry Pops
These summery berry pops are perfect for a hot day! Low carb and sugar free recipe.

- ½ cup blackberries about 10 large
- ½ cup blueberries
- ½ cup strawberries hulled
- 1½ cups water
- 2 tbs low carb sweetener
- ⅛ tsp xanthan gum
Add the blackberries, blueberries, and strawberries, water and sweetener to a saucepan. Bring the mixture to the boil, then reduce to a simmer until the fruit is mushy.
Let cool for 5 minutes, then pour everything into a blender and add the xanthan gum
Blend until smooth, then transfer everything to six pop molds.
Place them in the freezer until frozen!
3g net carbs per pop.
This recipe makes about 2¼ cups of liquid, which makes 6 x 3.5oz capacity pops.
