Roasted Cod with Tomatoes and Herbs

This low carb meal comes together quickly and tastes fantastic!

  • 2 cod fillets
  • 2 tbs butter
  • 1 tsp garlic paste or minced garlic
  • salt and black pepper
  • 10 cherry tomatoes
  • ΒΌ cup chopped herbs eg basil, parsley, chives, and tarragon


  • Preheat the oven to 375F.
  • Spray a baking dish with a little olive oil. Place the cod fillets in the baking dish. Melt the butter in a small bowl, and stir in the garlic. Pour the garlic butter over the fish, then season it with salt and black pepper.
  • Add the cherry tomatoes and sprinkle the herbs over the fish, then cover the dish with foil.
  • Roast for 20 minutes, removing the foil after 10 minutes.
