  • 8 oz cream cheese room temperature
  • 3 tbs low carb Confectioner's sweetener eg Swerve
  • 2 tbs coconut oil
  • ½ cup unsweetened flaked coconut divided
  • orange and green food dye
  • 2 edible candy eyes optional


  • Blend the cream cheese, coconut oil, and confectioner's sweetener together in a stand mixer. Transfer it to a bowl and place in the fridge for two hours or until hardened.
  • Meanwhile, divide the unsweetened flaked coconut between two bowls. Add some green food dye to one, and orange to the other. Mix each bowl well.
  • Form the cream cheese mixture into 16 balls. Roll 8 of the balls in the green coconut, and 8 balls in the orange coconut.
  • Keep in the fridge until required, adding two edible candy eyes to one of the monster bites before serving.
