Low Carb Purple Cauliflower Soup

  • 1 head purple cauliflower
  • 480 ml chicken bone broth
  • 1 cup water
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ¼ cup heavy cream
  • salt and pepper to taste


  1. Roughly chop the cauliflower and add it to a large saucepan. Add the chicken bone broth, water, onion powder, and garlic powder.

  2. Bring to the boil and continue to cook until the purple cauliflower is tender, about twenty minutes.
  3. Use a stick blender (immersion blender) to blend until smooth.

  4. Stir in some heavy cream and taste for seasoning, adding salt and pepper as necessary.
