Step-by-Step Instructions
- Prepare the rim: mix the sweetener and ground cinnamon together on a small plate. Drizzle the ¼ teaspoon of caramel syrup onto a paper towel and wipe it around the rim of each glass. Dip each glass upside down into the cinnamon mixture and turn it a few times to coat the rim. Set aside.
- Make the cocktail base: add the gin, vodka, apple oil and 2 tablespoons of caramel syrup to a small jug or cocktail shaker. Stir or whisk for about 30 seconds, until the syrup is completely mixed into the spirits.
- Fill the two prepared glasses with ice, then divide the cocktail base between them.
- Top each glass with about 6 fl oz (175 ml) of chilled club soda and stir gently once. Garnish with a star anise or a cinnamon stick and serve right away.

Notes
Apple oil is strong. Super-strength flavoring oil is much more concentrated than an extract. If you use apple extract instead, start with ½ teaspoon per drink and taste.
Make it a mocktail: skip the gin and vodka, use 1 tablespoon of caramel syrup and a few drops of apple oil per glass, and top with apple-flavored sparkling water.
Net carbs are calculated automatically from the nutrition facts below. The sweetener in the rim is left out of the count (monk fruit sweetener has zero net carbs).
