Step-by-Step Instructions
- Preheat the oven to 425°F (220°C).
- Peel the turnips and cut them into sticks about ½ inch (1 cm) thick, like regular fries. Pat them dry with paper towels.
- Put 2 tablespoons of the oil, the onion powder and the paprika in a sealable bag or a large bowl. Add the turnip sticks and shake or toss until every piece is coated.
- Pour the remaining 4 tablespoons of oil into a large rimmed baking pan and heat it in the oven for 5 minutes.
- Carefully add the turnip sticks to the hot oil in a single layer (the oil may spit), then season with salt and pepper.
- Roast for about 25 minutes, turning the fries halfway through, until golden and starting to crisp at the edges.
- Sprinkle with chopped fresh thyme or parsley and serve hot.

Air fryer method: Toss the turnip sticks with 1 to 2 tablespoons of oil plus the onion powder, paprika, salt and pepper. Air fry at 400°F (200°C) for 15 to 20 minutes, shaking the basket every 5 minutes, until golden. Cook in batches so the fries sit in a single layer.
Net carbs: about 6g net carbs per serving (a quarter of the recipe). The nutrition counts all of the oil, even though some stays behind in the pan.
Storing: Keep leftovers in an airtight container in the fridge for up to 3 days and reheat in the air fryer or a hot oven to crisp them up again.
