- Set aside about 2 tablespoons of whole cereal pieces for the garnish. Put the ¼ cup of cereal in a zip-top bag and crush it into coarse crumbs with a meat tenderizer or rolling pin.
- Tip the crumbs into a bowl, add the almond flour and melted butter, and mix well until it looks like damp sand.
- Divide the mixture between six 2-ounce shot glasses and press it down firmly with the back of a teaspoon.
- In a mixing bowl, whisk the pudding mix with the 1½ cups of cold almond milk for about 2 minutes, until it starts to thicken. (This is a little more milk than the box calls for, which gives a softer, spoonable pudding.)
- Right away, while it's still pourable, divide the pudding between the glasses.
- Chill for at least 30 minutes, until set. Top with the reserved cereal pieces just before serving.

About 4g net carbs per serving (one dessert, a sixth of the recipe). The erythritol in the pudding mix isn't counted in the net carbs.
Simply Delish pudding is now sold under the name Simply Desserts. Any sugar-free instant vanilla pudding mix of a similar size will work; check the carbs on the box.
Store covered in the fridge for up to 2 days. Add the whole cereal pieces just before serving so they stay crunchy. Not suitable for freezing.
