- To make the marinade, whisk together your sugar-free honey of choice, Dijon mustard, wholegrain mustard, and soy sauce (or tamari for gluten free).
- Place bone-in pork chops into the marinade and turn to coat. Cover and leave in the fridge for at least 30 minutes.
- Preheat a non-stick grill pan over a medium-high heat. Remove the pork from the marinade and season it with salt and pepper. Reserve the marinade, then cook the pork until done to your liking.
- Let the pork rest for 5 minutes, and bring any remaining marinade to a boil in a small pan.
- Serve the pork with the marinade drizzled over the top and chopped fresh parsley.
