- Preheat the oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or aluminum foil.
- Place the sausage, onion, zucchini, broccoli, and cauliflower onto the prepared sheet pan. Drizzle with the olive oil, then sprinkle with the salt, smoked paprika, garlic powder, oregano, mustard powder, and pepper.

- Toss the veggies and sausage to evenly coat them in the oil and seasonings, then spread everything out in a single layer with a little space between the pieces. Bake in the preheated oven for 25 minutes, stirring once halfway through, until the veggies are tender and browned at the edges.

- Sprinkle with parsley and serve immediately.

Notes
Use a large half sheet pan (18 x 13 inches) and spread everything in a single layer. If the pan looks crowded, split it between two pans so the vegetables roast instead of steam.
Leftovers keep in an airtight container in the fridge for 3 to 4 days. Reheat in a 400°F oven or air fryer for the best texture.
