Step-by-Step Instructions
- Set an oven rack about 6 inches below the broiler and preheat the broiler to high. Line a baking sheet with a silicone baking mat.
- Using a small, sharp knife, cut jack-o'-lantern eyes, a nose and a mouth into one of the tortillas. Keep the shapes large and at least 1 inch from the edge.
- Place the uncut tortilla on the baking sheet and broil for about 1 minute per side, until lightly crisp. Watch closely, as low carb tortillas brown quickly.
- Sprinkle the cheese evenly over the crisp tortilla. Place the cut tortilla next to it on the sheet and return to the broiler for 2-3 minutes, flipping the cut tortilla halfway through, until the cheese has melted and the face tortilla is crisp on both sides.
- Lay the jack-o'-lantern tortilla on top of the melted cheese, press gently, and serve right away.

Notes
Net carbs depend on your tortillas. Mission Carb Balance soft taco tortillas are about 4g net carbs each; check the label if you use another brand.
No broiler? Crisp the bottom tortilla in a dry nonstick skillet over medium heat, add the cheese and the face tortilla, then cover with a lid for 1-2 minutes until the cheese melts.
Leftovers keep in the fridge for up to 3 days. Reheat under the broiler or in a dry skillet to re-crisp.
