- Preheat the oven to 375F.
- Prepare the wings by removing the tip, then separating the wingette from the drumette.
- Beat two eggs together in a bowl, and add the prepared wings. Stir well so that the chicken is thoroughly coated.
- Pour the pork rind crumbs into a large freezer bag. Shake off the excess egg from the wings and place them in the bag. Discard the leftover egg.
- Shake the bag to distribute the coating, trying to make it as even as possible. Line a baking sheet with a silicone mat and place the coated wings on the pan.
- Roast in a preheated oven for 30 minutes, turning half way though cooking. Ensure that the wings have reached a temperature of at least 165F.
- Place the wings on paper towels to remove any excess grease, and serve warm.
- Try serving them with low carb ketchup or barbecue sauce!
