OK – so first of all – these wings aren't fried, they're roasted. BUT if you ever have a longing for something like KFC, then this easy three-ingredient “copycat” recipe is what you need. It's super easy to customize the wings too – as I'll explain!

The key to the breading is crushed pork rinds. As you may know, I use pork rinds in all kinds of low carb recipes! They're zero carb and OH so versatile! You can crush your own but the game changer for me is these seasoned pork rind crumbs from Pork King Good. 

I've used the Original version for years – but now I see that it's also available in Italian, Spicy Cajun and Stupid Hot flavors! You can buy them from Amazon or Netrition. I highly recommend that you order some – you'll find so any uses for them!

How to Make Low Carb Fried Chicken Wings

Prepare the wings by removing the tip, then separating the wingette from the drumette. Some poultry shears are useful for this task!

Beat two eggs together in a bowl, and add the prepared wings. Stir well so that the chicken is thoroughly coated.

Pour the pork rind crumbs into a large freezer bag. Shake off the excess egg from the wings and place them in the bag. Discard the leftover egg.  Shake the bag to distribute the coating, trying to make it as even as possible.

Line a baking sheet with a silicone mat and place the coated wings on the pan.

Roast in a preheated oven for 30 minutes, turning half way though cooking. Ensure that the wings have reached an internal temperature of at least 165F. 

Place the wings on paper towels to remove any excess grease, and serve warm.

Try serving them with low carb ketchup or barbecue sauce! I sprinkled a little fresh parsley over mine – but I'll be honest – that was just for show LOL!
