While perusing Pinterest the other day, I came across a wonderful looking recipe for “Sunshine in a Bottle Lemon Smoothie” from Foxes Love Lemons. Doesn't that sound SO appealing?!? I decided to adapt the recipe to make it low carb.
The main issue was that the original recipe uses low fat French vanilla yogurt. However, I recently discovered stevia-sweetened Two Good yogurt (and no, this recipe isn't sponsored by them!), which is made by the Light & Fit range from Dannon. Because of this, it seems widely available in the US, which is fantastic news for a low carb product. Flavor varieties include strawberry, peach, and blueberry – but of course it was the vanilla flavor that I was interested in! Oh, and for a one cup container (150g) it contains 3g net carbs. Pretty good!
Once I had the yogurt, the rest was easy! If you can't find it in store, you could substitute plain Greek yogurt instead, but you'll probably have to adjust the sweetness.
How to Make a Low Carb Lemon Smoothie (Sunshine in a Glass!)
Add the low carb vanilla yogurt to a blender, together with some ice cubes, the zest and juice of one lemon (I use my Microplane Zester!), heavy cream, and a little turmeric. You won't taste it but it adds a beautiful color and there are all kinds of health benefits to turmeric including helping digestion, anti-inflammatory properties, improving liver function, and even pain relief!
Blend until smooth – I recommend a powerful blender like a Ninja!
Taste for sweetness – you might like the sharp lemon taste but if you prefer it sweeter then add some homemade simple syrup (I always have some on hand!), liquid stevia or even some low carb honey.
Pour into a glass and enjoy the taste of sunshine – low carb style!
Oh – and if you're loving lemon recipes right now – why not try this Low Carb Lemon Blueberry Cream Cake from Explorer Momma! It looks SO good!

Sounds delicious and refreshing! I'm a lemon fanatic but most of my lemon faves are super high carb desserts. I have everything so I'll definitely make this smoothie for breakfast tomorrow.
