So what exactly IS a Tom Collins? Here's what wiki says:
The Tom Collins is a Collins cocktail made from gin, lemon juice, sugar, and carbonated water. First memorialized in writing in 1876 by Jerry Thomas, “the father of American mixology”, this “gin and sparkling lemonade” drink is typically served in a Collins glass over ice.”
So it's pretty easy to convert the traditional version into a keto-friendly one, as long as you use a sweetener instead of the sugar. I prefer to use my homemade simple syrup which is just perfect for this recipe! Here's a video:

How to Make a Keto Tom Collins
In a tall glass (eg – a Collins glass!), add gin and syrup. How much syrup you add is up to your personal preference of how sweet you like your drinks. But between one and two tablespoons should be all you need. Squeeze half a lemon into the glass (I love this citrus squeezer!) – you need about two tablespoons.
Stir to combine, then fill the glass with ice.
Top up with club soda or soda water, and garnish with a slice of lemon.
