Before I started a low carb diet MANY years ago, I didn't really care for white chocolate. And I pretty much forgot about it because there wasn't a low carb alternative – it just wasn't on my radar! But recently I saw that Lily's Sweets now make white chocolate style baking chips. I've been a fan of Lily's for many years and I've loved all their products, so I decided to try them.
And I thought they were REALLY good – I was converted! I wanted to make something that really showcased the flavor so this simple two-ingredient mousse was an obvious choice. I've seen these chips in Whole Foods, Target, and some other grocery stores, and you can also buy them from Amazon (of course!), and Netrition. They're sweetened with stevia and erythritol, and a serving size of 30 chips is just 2g net carbs.
Another product you might like to try are the white chocolate chips from ChocZero – but I've yet to try them. They're next on my list!
How to Make a Keto White Chocolate Mousse
Pour some heavy cream into a microwave-safe bowl and heat for about a minute or until it starts to bubble. Add the Lily's white chocolate chips. Gently whisk until the chips have thoroughly melted into the cream. Set aside for 10 minutes to cool.
Add more heavy cream to a stand mixer and beat until stiff peaks form. Carefully fold the chocolate mixture into the whipped cream.
Transfer to a serving bowl or dish, and chill in the fridge for at least an hour.
Garnish with a few extra white chocolate chips before serving.
At first glance it looks like a huge bowl of whipped cream, but the white chocolate flavor changes that completely! It's rich and creamy, and yet somehow light and airy at the same time!

- Pour ½ cup of the heavy cream into a microwave-safe bowl and heat for about a minute or until it starts to bubble.
- Add the Lily's white chocolate chips and gently whisk until the chips have thoroughly melted into the cream. Set aside for 10 minutes to cool.
- Add the remaining heavy cream to a stand mixer and beat until stiff peaks form. Carefully fold the chocolate mixture into the whipped cream.
- Transfer to a serving bowl or dish, and chill in the fridge for at least an hour.
- Garnish with a few extra white chocolate chips before serving.
