This low carb side dish is LOADED with wonderful spinach! It's held together with lots of egg and cheese, and seasoned with paprika!
My husband said he expected it to be super high fat – and as a non-low carber living with me, he knows what is likely! But actually, he said that it felt like he was getting a lot of spinach per spoonful – some fat, yes – but it could have been “worse”.
So you can read into that what you like – this is a dish that makes a LOT of spinach very easy to eat. It's perfect for mixed company. However, if it's just for people who are following a keto or low carb diet, you might like to add a little layer of cheese on top. 🙂
How to Make a Low Carb Spinach Pie
Cook two packs of frozen spinach according to the pack instructions, and drain thoroughly. REALLY thoroughly. Nobody likes a soggy pie. Combine the spinach with the rest of the ingredients, and mix well. Make sure that you add a generous amount of salt and pepper.
Spoon the spinach mixture into a baking dish (I used one of my favorite Le Creuset dishes). You can prepare up to this stage in advance, if convenient.
Bake in a preheated oven for 20-25 minutes or until the center has set and the top is starting to turn brown at the edges.
Serve this side dish with roasted meat or fish. If you have any leftovers it reheats really well, too!

- 2 x 10 oz boxes of frozen spinach
- 1 cup shredded mozzarella
- 3 eggs, beaten
- 2 tbs heavy cream
- 1 tsp paprika
- a generous amount of salt and pepper
Instructions
- Preheat the oven to 350F.
- Cook the frozen spinach according to the pack instructions, and drain thoroughly.
- Combine the spinach with the rest of the ingredients, and mix well.
- Spoon the spinach mixture into a baking dish, and bake for 20-25 minutes or until the center has set.
