Even on a cold winter’s day the bright flavors of this fresh vegetable dip will really get you going!
To make the dip, add cream cheese, sun dried tomatoes (the ones packed in oil), baby spinach and fresh basil to a food processor. I usually splash a bit of the tomato oil in too as it has SO much intense flavor. (In fact, after the tomatoes have all been eaten I always save the oil and use it for cooking all kinds of meals!)
Process everything until smooth. Check for seasoning – to be honest I’ve never needed to add any salt and pepper! Serve straight away or chill in the fridge.
This could be served as an appetizer or it would be easy to increase the measurements to make it on a large scale for a party. Here are some ideas of what you could use to dip into it!
