This flavor combination was completely inspired by a recipe that I saw on Whisk It Real Gud – peach glazed chipotle honey chicken wings! It made me long for them so much that I just HAD to work out how I could make this work for a keto and low carb diet.
Peaches aren't keto-friendly, of course. And although I did consider using a peach preserve (It does exist: Smucker's Sugar Free Preserve. It's sweetened with Splenda but is easily sourced in places like Target or Walmart for under $3), but I decided instead to go with the Peach Syrup from Choc Zero.
Now, this IS a seasonal product, and generally only available in the summer – but it only just came back in stock this week so order soon! It's sweetened with monkfruit extract, contains natural peach flavor, and is 1g net carb per tablespoon.
How to Make Keto Peach Chipotle Chicken Wings
If you have bought the chicken wings whole, separate them into wingette, drumette, and tip using poultry shears. Discard the tips and place the other parts on a non-stick rack that has been placed over a foil-lined baking sheet.
Season with salt and pepper and roast in a preheated oven for 25-30 minutes or until the wings have reached an internal temperature of 165F.
Meanwhile, make the glaze by combining the peach syrup, one chipotle in adobo sauce, some additional adobo sauce, and some white wine vinegar. Blend until smooth using a mini food processor or stick blender.
Give it a taste test and if the heat blows your head off, add more syrup! If it's too sweet, add more adobe sauce and/or vinegar.
When the wings are done, transfer them to a bowl and pour the glaze over.
Turn to coat, then transfer the wings to a serving platter. Garnish with chopped fresh parsley and serve.
They smell SO good! And the taste – a perfect blend of the fruity peach and smoky heat from the chipotle!
