At first I thought ice cream – but after all it is September. And then I realized that I could make it into a mousse if I added cream. SO. GOOD.
How to Make a Low Carb Caramel Chocolate Mousse
Break up the chocolate and place it in a bowl over a pan of gently bubbling water (bain marie). Melt the chocolate, stirring occasionally to ensure there are no lumps.
Remove from the heat and add some heavy cream. Gently whisk to combine fully. Let cool.
Beat some more cream until stiff peaks form, and carefully fold it into the chocolate mixture.
Divide the mousse between four bowls or dishes, then cover and place in the fridge for at least an hour.
Garnish with a sliced square of Joy Bites Caramel Chocolate Squares or some finely grated Joy Bites Smooth Creamy Chocolate.
I love how you can really taste the caramel – it may look like any old chocolate mousse, but it tastes SO much better! It's light in texture but rich in taste.

- 2 x (2.9 oz) bars Joy Bites Caramel in Chocolate
- 1 cup heavy cream, divided
Instructions

Hi. Could I use russell stovers carmel and chocolate squares as long as the ounces are correct? I can not get Joy Bites as I live in rural arizona. I could order it on line but I want to make it for tomorrows dessert. Thanks for all the wonderful recipes you post. I have used several and enjoyed them all.
