This super simple appetizer is quick to prepare and has a fantastic combination of flavors and textures. Caviar doesn't come cheap, so save this recipe for a special occasion! It only requires four ingredients, too: Cucumber, crème fraiche, caviar and fresh chives!

How to Make Caviar and Cucumber Bites
Slice the cucumber (I use an English cucumber because I prefer having less seeds) – you want the thickness to be sturdy enough that it can support the toppings, but not so thick that it can't be eaten in one large bite!
Add crème fraiche to each cucumber slice. If you don't have creme fraiche, you could also use sour cream – the flavor would be mellower but you might prefer that! Place a little spoonful of caviar on the top of each cucumber slice. I've used red salmon roe here, but if you want to be extra fancy you could use the black sturgeon row instead. I love both kinds – particularly the amazing pop of flavor in the mouth and caviar appetizers always feel so decadent!
Finish with a small length or two of fresh chives. Place on a serving plate and enjoy!

- ½ English cucumber
- 4 tbs creme fraiche or sour cream
- 1 oz salmon roe caviar
- 1-2 fresh chives, snipped
Instructions
- Slice the cucumber into 8 medium-thickness pieces.
- Add creme fraiche or sour cream to each cucumber slice, then place a little spoonful of caviar onto the top of each one.
- Finish with a small length or two of fresh chives.
- Place on a serving plate and enjoy!

This recipe is awesome. I've been trying to add more caviar into my eating plan for the nutrition. I don't have access to creme fraiche and found as you mentioned the sour cream a bit blah. I changed it up the 2nd time I made it by adding a bit of acid to the sour cream. I experimented with lemon juice, lime juice and apple cider vinegar. All of these brought different flavor profiles out but most importantly that missing zing in the sour cream.
