This keto black forest parfait is a gorgeous combination of whipped cream, chocolate chips, and keto-friendly black cherry jel dessert!

This recipe was completely inspired by the newest flavor of jel dessert from Simply Delish – black cherry! It made me think of think of the classic German cake: Black Forest Gâteau. So what are the components? Well, according to Wiki:
Typically, Black Forest gateau consists of several layers of chocolate sponge cake sandwiched with whipped cream and cherries. It is decorated with additional whipped cream, maraschino cherries, and chocolate shavings. In some European traditions, sour cherries are used both between the layers and for decorating the top.”
Whipped cream is obviously no problem, and the jel dessert adds the essential cherry flavor. And as for the chocolate cake? I decided to skip the cake altogether and make a parfait – with chocolate chips and chocolate shavings. The result was delicious, and much easier than making a cake!
How to Make a Keto Black Forest Parfait
Make the black cherry jel dessert in advance. Follow the pack instructions, and let it solidify in a shallow tray, jug, or whatever. It really won't make much difference – as I'll explain!
Oh and by the way – that deep purple color is all natural – it comes from red grape powder!
When the jel dessert is set (I left mine overnight, but an hour in the fridge should be enough), roughly chop it into bite sized pieces. It REALLY doesn't have to be exact!
In a stand mixer, whisk heavy cream, powdered low carb sweetener, and a little vanilla extract together until stiff. If you have the opportunity to put the whisk beater and/or stand mixer bowl into the fridge or freezer first it will improve your whipped cream.
Now for the layering! Start with a couple of spoonfuls of cream into each glass or dish (or even large shot glasses!). Then add some broken-up black cherry jel dessert, and a few low carb chocolate chips (I'm a long-term Lily's dark chocolate fan!).
Depending on which vessel you use, the number of layers might be anything from 3-6. This parfait is not about precision, it's about layering the flavors – so don't stress too much about it!
I like to finish with some cream – but make sure some of the black cherry jel dessert and chocolate chips are poking out. I use my Microplane to shave a little low carb chocolate over everything.
Cover and store in the fridge until required.
The whipped cream makes this dessert (unsurprisingly!) rich – but the crunch of the chocolate chips and the fruity jel dessert cuts through it so perfectly!
The longer you leave it the (natural!) colors of the jel dessert will leak into the cream but in my experience that only adds to the dish. The cream will deflate, so you probably don't want to leave it in the fridge longer than a day – for best results!

- 1 cup heavy cream
- ¼ cup powdered low carb sweetener
- 1 tsp vanilla extract
- ¼ cup low carb chocolate chips
- grated low carb chocolate, to garnish
