I recently asked my newsletter subscribers if they wanted me to convert a particular high-carb recipe into a low one, and hamburger casserole was one of the suggestions! A hamburger casserole (also sometimes known as a cheeseburger casserole) is made with a ground beef meat sauce, vegetables, and either potatoes or pasta. I decided to use low carb pasta, but also replaced the onions with onion powder, and kept the tomato content down.
The pasta I used is rotini from Great Low Carb Bread Co, and you can buy it from the company direct or it is also available on Amazon (check out this four-pack of different pasta shapes!) – but you could substitute your favorite low carb pasta (or even cauliflower florets!) and calculate the nutritional data accordingly.
How to Make a Low Carb Hamburger Casserole
There are three main components to this dish: the pasta, the mushrooms, and the meat sauce. If you're organized you could cook all three at the same time, but if you prefer – one after the other is fine too!
Cook the pasta until almost done, then drain and set aside.
In a large skillet, melt some butter and add some sliced mushrooms. Sauté for 10 minutes, stirring occasionally.
Use a slotted spoon to remove them from the skillet and set aside. Add some ground beef, and cook in the butter until browned. Drain any excess liquid, then return the skillet to the heat and add tomato sauce, garlic paste, onion powder, and Italian seasoning.
Cook over a medium heat for 10 minutes, stirring every now and then. Taste for seasoning, and add salt and pepper as desired.
Transfer the meat sauce into a large bowl and add the mushrooms and pasta, then mix to combine.
Pour everything into a 9 x 13″ baking dish and sprinkle some shredded cheese over the top (I used sharp cheddar).
Bake in a preheated oven for 10-15 minutes or until the cheese has melted.
Serve this casserole with a crisp green salad to complete the meal!

- 6 oz low carb pasta
- 2 tbs unsalted butter
- 8 oz sliced mushrooms
- 1 lb lean ground beef
- 15 oz canned tomato sauce
- 1 tbs garlic paste
- 1 tbs Italian seasoning
- 1 tsp onion powder
- salt and black pepper
- 1½ cups shredded cheese (eg sharp cheddar)
Instructions
- Preheat the oven to 400F.
- Cook the pasta in boiling water until almost done, then drain and set aside.
- In a large skillet, melt some butter and add some sliced mushrooms. Sauté for 10 minutes, stirring occasionally.

5g net carbs per serving NOT including the low carb pasta as there are too many variables.
