If you've never had burrata before, you can read more about it here. Prosciutto should be self explanatory, but what about that honey?!?

Recently I posted all about low carb honey – sugar free products available and how to make a zero carb honey! 

Low Carb Honey

The honey is simply mixed with some hot sauce and warmed through in the microwave. It's such a fantastic combination of flavors and textures with the prosciutto and burrata!

How to Make Low Carb Flatbread with Burrata, Prosciutto, and Honey

Make the fathead dough according to the separate recipe, and add a little salt and pepper to the dough.

Place the dough on a baking sheet lined with a silicone mat, and place another mat on top. Use your hands or a rolling pin to smooth it into an even layer.

Remove the top mat and bake in the oven for 5 minutes. Carefully flip it over, and bake for another 4-5 minutes or until all the edges have turned golden brown.

Meanwhile, make the hot honey by combining zero carb honey and hot sauce (I used Tabasco). Heat in the microwave until it starts to bubble.

Load up the cooked flatbread with curls of sliced prosciutto. Tear open the burrata and place it over the top.

Drizzle the hot honey over the burrata and prosciutto, season with black pepper, and serve immediately.

To serve you'll need a fairly sharp knife (due to the prosciutto) and a knife and fork is recommended for eating unless you don't mind getting a little messy!

Ingredients

For the flatbread dough

  • 1 cup shredded mozzarella
  • 2 tbs cream cheese
  • 1 cup fine almond flour
  • 1 egg, beaten
  • salt and black pepper

For the toppings

Instructions

  1. Preheat the oven to 350F.
  2. To prepare the dough, mix the shredded mozzarella and cream cheese together in a bowl. Microwave for about a minute or until it is fully melted, then stir to mix thoroughly.
  3. Let cool for a few moments, then add the almond flour, beaten egg, salt, and black pepper. Mix well. Knead the dough with your hands until it is smooth.
  4. Place the dough on a baking sheet lined with a silicone mat, and place another mat on top. Use your hands or a rolling pin to smooth it into an even layer.
  5. Remove the top mat and bake in the oven for 5 minutes. Carefully flip it over, and bake for another 4-5 minutes or until all the edges have turned golden brown.
  6. Meanwhile, make the hot honey by combining zero carb honey and hot sauce - start with ½ tsp of hot sauce and add more to taste. Heat in the microwave until it starts to bubble.
  7. Transfer the cooked flatbread to a cutting board and load it up with curls of prosciutto.
  8. Tear open the burrata and place it over the top. Drizzle the hot honey over the burrata and prosciutto, season with black pepper, and serve immediately.
