Bacon Jam is a delicious low carb condiment made from bacon, tomatoes, onions and spices. It is traditionally slow cooked but I decided to speed things up a little. When I get cooking with bacon I suddenly feel the need for speed!

How to Make Quick Cook Bacon Jam
Cook the bacon however you prefer. I like to put it under the broiler on a rack so that the excess fat drips off. Mmmmmmm BACON.
Pat the bacon dry then roughly chop.
Add it to a large saucepan with a whole jar of salsa. You can use mild, medium, spicy, chunky – whichever salsa you like – just check the carb content first. Look for a product with a carb content of 2g per two tablespoons, like this Green Mountain Gringo salsa. At this point you could also add some liquid smoke and/or chipotle powder. I usually add both!
Bring the mixture to a boil then simmer for five to ten minutes until it reduces a little and thickens. Do a taste test. You might find you need to add a little salt at this point – it will depend on your preferences and the salsa that you've used.
Leave the jam to cool then transfer it to a mason jar or similar, and store it in the fridge. This recipe makes about 12oz.
So… what can you do with it? Well, first of all if you actually taste some you wouldn't wonder what to do with it – this stuff is great straight off the spoon! But if you like to be conventional then you could use it as a condiment to a chicken main meal, load up some slices of radish or cucumber, or put it in a low carb tortilla wrap with some cheese for a light lunch or snack. Did I mention you can just eat it with a spoon?

Ingredients
- 12 oz bacon, cooked and roughly chopped or crumbled
- 16 oz salsa, as low in carbs as possible
- 1 tsp liquid smoke, optional
- 1 pinch chipotle powder, optional
- salt, optional
Instructions
- Add bacon, salsa, and any optional ingredients to a saucepan.
- Bring to the boil and then simmer for 10 minutes until it has reduced and thickened.
- Let cool then transfer to a mason jar or similar. Store in the fridge.
