As I'm sure you're aware, I use pork rinds a LOT. They're great for snacking but when they're crushed they have SO many uses: breading, topping, coating – they can even help keep meatballs together. They can be used in place of high carb breadcrumbs in pretty much every recipe!
Bacon's Heir have been making Pork Clouds since 2013, and they have a such a great range of flavors including Rosemary & Sea Salt, and Habernero Pepper. But now they have launched Pork Panko – a zero carb alternative to breadcrumbs.
I love how it says “0g Total Carbohydrates Per Package” on the label! The panko only contains two ingredients: pork rinds and salt. And the crumbs are REALLY fine – better than I could make for myself!
I thought they would be perfect as a breading for baked mozzarella sticks, and they didn't disappoint!
How to Make Low Carb Mozzarella Sticks
Cut the mozzarella cheese strings (make sure you buy strings, not cheese sticks) in half and place them in a container in the freezer. Freeze until solid.
In a small bowl mix together the Pork Panko and some Italian seasoning. In a separate bowl, beat an egg.
Dip the mozzarella in the egg, then coat them in the panko mix. Place on a baking sheet lined with a silicone mat or similar.
Bake in a preheated oven for 3 minutes. Turn them over and bake for another 3 minutes or until the cheese starts to melt.
Let cool slightly, then serve.
Marinara is the traditional sauce for this dish, but I prefer low carb salsa!

- 6 mozzarella cheese strings
- ½ cup Pork Panko
- 1 teaspoon Italian seasoning
- 1 egg
- low carb salsa or marinara, to serve
Instructions
- Cut the mozzarella sticks in half and place them in a container in the freezer. Freeze until solid.
- Preheat the oven to 400F.
- In a small bowl mix together the Pork Panko and Italian seasoning. In a separate bowl, beat the egg.
- Dip the mozzarella in the egg, then coat them in the panko mix. Place on a baking sheet lined with a silicone mat or similar.
- Bake for 3 minutes. Turn them over and bake for another 3 minutes or until the cheese starts to melt.
- Let cool slightly, then serve with salsa or marinara.
Notes
0.5g net carb per serving of three sticks.
