Aah, the humble G&T. Did you know that it originated as a cure for malaria? This is from wiki:

In India and other tropical regions, malaria was a persistent problem. In the 1700s, Scottish doctor George Cleghorn studied how quinine, a traditional cure for malaria, could be used to prevent the disease. The quinine was drunk in tonic water but the bitter taste was unpleasant. British officers in India in the early 19th century took to adding a mixture of water, sugar, lime and gin to the quinine in order to make the drink more palatable, thus gin and tonic was born.”

As for this recipe, it's a very simple drink that is highly refreshing. I usually enjoy lime in my G&Ts, but I experimented with lemon and basil instead – and what a great result! Just make sure you use fresh lemon juice (not bottled) and buy diet / slimline tonic water.

Add a few fresh basil leaves and lightly muddle them together to release the oils from the basil.

Top up with diet tonic water and garnish with a lemon twist. Actually before photographing this drink I researched all kinds of ways of adding a lemon zest garnish – and found that a simple curvy concertina on a cocktail stick was one of the easiest and visually pleasing!

In the recipe card I have listed a single serving, but obviously it is very easy to make more – especially as there's more juice to be got from that lemon!
