This recipe was created because I recently ordered ribs from a new restaurant. I always order them dry, because typically restaurant-style sauces are loaded with sugar. They still sent the sauce along, but on the side. And they included a yellow barbecue sauce (also known as Carolina Gold), which I'd never had before. It still had sugar in, but I knew immediately that I needed to make my own version! So what is it?
Part of South Carolina is known for its yellow barbecue sauces made primarily of yellow mustard, vinegar, sugar and spices. This sauce is most common in a belt from Columbia to Charleston." Source: Wiki
I read a load of recipes and discovered that the main ingredients apart from the mustard and vinegar were honey, brown sugar, ketchup or tomato, and some kind of chipotle sauce or seasoning. After some experimenting I came up with a sauce that is REALLY easy to make and has a ton of flavor. It's my new go-to barbecue sauce!
How to Make a Keto Carolina Mustard BBQ Sauce
Combine some yellow mustard and apple cider vinegar together in a bowl. Next add some golden Lakanto, low carb honey, low carb ketchup (see my full article on ketchup options, but my favorite store-bought product is by G Hughes), and Worcestershire sauce.
Taste for seasoning - it may well already be perfect for you. But if you want to take it to the next level, finely chop one or two chipotle peppers in adobo sauce, and add them to the bowl with a little of the sauce as well.
Finish with a grind of black pepper.
Transfer the sauce to a jar, then cover and store in the fridge.
To reheat, place the required amount in a small saucepan and warm through. Alternatively the sauce can be reheated in the microwave.
This sauce is particularly great with chicken wings - just roast the wings with a little salt, then toss them in the warmed sauce before serving.
It's also fantastic with chicken drumsticks, burgers, chicken thighs, and ribs!
Note: Nutritional data is best estimate as it will depend on the specific products used (eg the honey and ketchup). Store bought versions can range from 10-15g net carbs for two tablespoons - my versions is under 2g.
