I've always loved the combination of smokey heat and creamy sauce. Having said that, the chipotle powder is optional, so if you want the smokiness without the heat you could substitute it with paprika. My favorite way to use this dressing is to prepare it in advance for a weeknight meal, cook up a steak in the evening and place the dressing on top. It adds extra flavor that complements the steak and adds a welcome sauce element to the dish.
How to Make a Creamy Tomato Salsa Dressing
To prepare the sauce, quarter a large tomato and remove the seeds. Dice the flesh and add to a bowl. Also add sour cream, cilantro, chipotle powder and lime juice. I often use the cilantro paste you can buy in tubes for this recipe – the paste seems to blend in better with the rest of the dressing.
Stir well and check for seasoning. Leave in the fridge (covered) until required.
