Did you see that Simply Delish just released a new “flavor”?!? It was their Fools' Day joke on April 1st – because actually the new product is UNflavored!
With this unflavored product in mind – I set out to find a flavor that I rarely use because it is way too high in carbohydrates. It could have been mango, pineapple, grape, apple… (see my article on low carb fruit for carb counts!)
In the end, I actually went for passion fruit flavor! This is mainly because I had some passion fruit flavoring, left over from making a low carb hurricane cocktail! Passion fruit isn't particularly high in carbohydrates; the seeds and pulp from one fruit contain about 2.3g net carbs. If I'd found any in local stores I would have bought one for garnishing this dessert. But fresh raspberries are a good alternative!
How to Make Keto Passion Fruit Mousse
Place the Simply Delish Unflavored Jel Dessert in a jug and add ⅓ cup cold water. Whisk vigorously, then add ⅔ cup boiling water, and whisk again.
Let the jel mixture cool, and meanwhile add heavy cream and low carb powdered sweetener to a stand mixer bowl. I used Lakanto which is made with monkfruit and erythritol.
Whisk until soft-medium peaks form, then add the passion fruit flavoring to taste – I used about a teaspoon, but brands may vary. I also added a few drops of orange food dye, which is optional but I think it makes the final result more appealing.
With the mixer on low speed, slowly add the cooled jel mixture until fully incorporated.
Spoon the mousse into six bowls or glasses, then cover and store in the fridge until required. The Jel will keep the stable so you can make it up to a week in advance – it won't separate!
When ready to serve, garnish with fresh raspberries and/or mint leaves – or a spoonful of passion fruit seeds if you can find them!
