How to Make a Keto Peaches and Cream Dessert
To make the cream layer, prepare some unflavored gelatine powder (eg Knox) by sprinkling it over some water and whisking with a fork. Set aside.
Add some heavy cream, sweetener ( I used classic Lakanto), and vanilla extract (clear is preferable, but not essential) to a small saucepan.
Bring to the boil, then remove from the heat and quickly whisk the gelatine into the cream until it has full dissolved. Divide the cream mixture between four bowls or glasses. Note: this layer isn't particularly sweet, so if you prefer it sweeter you might like to double the amount of sweetener used.
Let cool, then transfer to the fridge for at least an hour or until set.
To make the peach layer, prepare a packet of Simply Delish Peach Jel Dessert according to the pack instructions.
Let it cool, whisking frequently so that it doesn't start setting. Try and get it as cool as possible (but still pourable) before you divide it between the bowls or glasses.
Leave it to cool fully, then transfer to the fridge to set completely. These desserts can be made up to three days in advance.

- 1 cup heavy cream
- 2 tbs classic Lakanto (or similar low carb sweetener)
- 1 tsp vanilla extract
