As you've probably noticed, I'm REALLY enjoying the jel desserts and puddings from Simply Delish right now. So when they challenged a group of us to create and share our unique recipes with the two products they had selected – I was all over it! With Valentine's Day approaching I couldn't resist working the theme into my dessert – but you could absolutely make this cake at any time of year with any of the jel dessert flavors – try peach, raspberry, black cherry, or orange!

How to Make a Keto Strawberry Jel Cake

To make the base, combine melted butter and almond flour together in a bowl.

Press the mixture into the base of a greased 9″ springform pan.

Bake in a preheated oven for 8-10 minutes or until the edges darken, then let cool.

To make the pudding layer, make up one pack of Simply Delish strawberry jel dessert according to the pack instructions.

Working quickly, next combine two packs of Simply Delish vanilla pudding with two cups of unsweetened almond milk in a stand mixer.

When smooth, and with the speed on low, add the strawberry jel mixture.

Spread the pudding mixture over the base. Hull and halve some fresh strawberries (I love my hulling tool!), and place them around the edge of the pudding layer, and two in the middle (if making for Valentine's Day make sure they are heart shaped!).

Place in the fridge for at least an hour, or until thoroughly set.

For the final layer, make up a second box of Simply Delish strawberry jel dessert, again according to the pack instructions. Leave to cool for 10 minutes, then carefully pour it over the pudding layer and strawberries.

Let set for 10 minutes, then transfer to the fridge for at least an hour (overnight is fine).

When you have a slice, you get the cool refreshing strawberry jel on top, then the creamy strawberry-vanilla center, finished with the nutty and buttery base. It's SO good!

Ingredients

For the base

  • 1½ cups fine almond flour
  • 4 tbs (2 oz) unsalted butter, melted
  • non-stick spray

For the pudding layer

Instructions

  1. Preheat the oven to 375F.
  2. To make the base, combine melted butter and almond flour together in a bowl. Press the mixture into the base of a greased 9″ springform pan. Bake for 8-10 minutes or until the edges darken, then let cool.
  3. To make the pudding layer, make up one box of strawberry jel dessert according to the pack instructions.
  4. Working quickly, next combine two packs of Simply Delish vanilla pudding with the unsweetened almond milk in a stand mixer. When smooth, and with the speed on low, add the strawberry jel mixture. Spray the sides of the pan with non-stick spray, and then spread the pudding mixture over the base.
  5. Place the strawberries around the edge of the pudding layer, and two in the middle (if making for Valentine's Day make sure they are heart shaped!). Place in the fridge for at least an hour, or until thoroughly set.
  6. For the final layer, make up the second box of strawberry jel dessert, again according to the pack instructions. Leave to cool for 10 minutes, then carefully pour it over the pudding layer and strawberries.
  7. Let set for 10 minutes, then transfer to the fridge for at least an hour (overnight is fine).
