Although this recipe only requires three simple ingredients, getting the right balance of the tender asparagus, slightly crispy prosciutto, and melted cheese can be a delicate one. If you have super skinny asparagus then you may be able to skip the pre-cooking stage. But as shown here, these are medium-thick stems and really benefited from part cooking before roasting. If I hadn't done that then the cheese would have fully escaped the bundle and the prosciutto would probably have burned before the asparagus was cooked through.

Oh and a quick note about the cheese. I used pepper jack – which I found to be a fantastic combination of flavors. However, I think my husband would have preferred something milder, like Swiss cheese or cheddar. So choose whatever you like – it's pretty hard to get it wrong!

How To Make Asparagus Bundles with Prosciutto and Cheese

Trim the “woody” stalks from the ends of the asparagus, and part-cook in boiling water for 5 minutes, or until the stems have just started to soften. Remove from the water and let cool slightly.

Place a slice of prosciutto on a board and lay a slice of cheese in the center. Then add four stalks of asparagus.

Wrap the prosciutto around the asparagus, and place it on a small baking sheet lined with a silicone mat (I use this quarter size pan). The silicone mat is important if you want to serve the bundles with any cheese that has melted out – and trust me – you do!

Repeat with the rest of the asparagus until you have four bundles. Season with black pepper.

Roast in a preheated oven for 8-10 minutes until done to your liking.  Let cool for a few minutes then serve – making sure you get all the cheese!

This made a wonderful lunch for me and my husband the other day. But it could also serve four people as a wonderful side dish or appetizer. And the great news is, it can all be prepared in advance!

Ingredients

  • 16 medium asparagus stems, approx 10 oz
  • 4 slices prosciutto
  • 4 slices cheese
  • black pepper

Instructions

  1. Preheat the oven to 400F.

Notes

3g net carbs per serving of 2 bundles per person. 

You could also serve this as an appetizer or side dish to serve 4 people.
